Bridal Shower Catered

I was invited to cater a friends Bridal Shower. It was so much fun. The theme was beach with Caribbean styled food. So we came up with the following menu.

Strawberry Lemonade with real crushed Strawberries - It was so yummy.

Pineapple Shrimp - with a great dipping sauce.
3 dips: Mild & Wild Salsa, Deb's (my) Guacamole, and Mango Salsa (amazing I must say) with tortilla chips.
Caribbean Jerk Chicken - everyone loved it! Ham & Pineapple roll ups.
Chocolate Fountain! Oh ya baby! Nothing like a fountain of running chocolate that can be drizzled, dipped, spooned, scooped and layered on everything!
And my personal favorite Pina Colada Cake Pops. YUMM. I used pineapple juice instead of water when making the cakes. Oh my .... heaven. 

Everyone loved the food - lots of love on the Caribbean Jerk Chicken and the Roll Ups. I had never made Caribbean Jerk Chicken before - and have to say I really liked it... a lot. I was sweating having not tried the recipe before... dear hubby even asked "have you made that before?" "Nope, but I can read a recipe!"  I am just glad it was all good. I was really excited when I got a call back to come back and cater another gathering by one of the sweet ladies that attended! Whoo hoo!

Did ya notice the cute little food sign?. Made them with the big shot flower die and Stampin Up Designer Series Papers. Super duper adorable huh! I am available for catering your special events - email me with your need anytime. I work cheep.. just don't let that get around! ha.

Ham & Pineapple Roll Ups  Recipe:
Soften cream cheese, stir in crushed drained pineapple, diced up lunch meat ham, and chopped up green onion. Spread on kinda think of one lightly heated flour tortilla. Roll up. Wrap in plastic wrap and set in fridge till firm. Unwrap from plastic and cut in about 1" slices. Served on a platter. Gobble em' up!
